Baked Mussels with Chilli, Garlic and White Wine

Celebrate the weekend with some fantastic seafood. Mussels are sustainable and cheap. This tray bake makes them super simple to cook...

Mussels with Chilli, Garlic and White Wine

 

Ingredients

  • 1kg Mussels, from a sustainable source

  • 4 cloves garlic, peeled and sliced

  • 2 red chilli, sliced

  • sea salt

  • black pepper

  • 1 lemon

  • 1 large glass white wine, around 150-200ml

  • Olive oil

 

Method

Step 1

Pre-heat your oven to 180 degrees celsius.

Step 2

Clean your mussels by removing the beards and throwing away any open ones.

Step 3

Put all your mussels into a large roasting tray. Top with your sliced garlic, chilli and the zest of 1 lemon. Add a good pinch of sea salt, black pepper and a splash of olive oil.

Mix everything around to get them all coated.

Step 4

Add your glass of white wine and cut your lemon in half and squeeze the juice over the mussels (add the leftover lemon to the tray for extra flavour!)

Now put your mussels in the oven to bake for 10 minutes, or until all the shells have opened.

Step 5

Remove the tray from the oven and discard any mussels that have not completely opened.

Now tuck in and enjoy the weekend!!
