The ULTIMATE Cheese Toastie

Are you after an easy weekend snack, that’s warm and comforting? This oozy cheese toastie will do the trick!

The ULTIMATE Cheese Toastie
 

Ingredients

  • 1 loaf of sourdough bread

  • 1 block of vintage cheddar cheese

  • 1 block of red leicester cheese

  • butter

 

Method

Step 1

Heat a non-stick fry pan over a medium heat.

Step 2

Cut 4 thick, even slices of bread. Butter both sides of the slices.

Step 3

Grate your cheddar and red leicester cheese. About 2 large handfuls of each. Mix together to combine.

Step 4

Place a handful of the mixed cheese on two pieces of bread and then place the other two pieces of bread on top of the cheese to make your sandwich. Leave about half of the cheese in reserve (you will see what happens with that below).

Step 5

Grill your sandwiches in the pan for 3 minutes a side or until golden. Place a sheet of baking paper over the top of the sandwiches whilst grilling with an empty pan, or something heavy on top to allow maximum contact of the sandwich with the hot surface.

Step 6

Carefully remove the sandwiches from the pan and sprinkle a layer of grated cheese directly onto the hot pan. Place your sandwiches on top of this layer of melted cheese and then sprinkle the remainder of the cheese on top of the sandwiches. Grill for 1 more minute.

Step 7

Carefully lift the sandwiches out of the pan and hold in the air for 30 seconds. You should see the layer of cheese on the bottom stretching down. After 30 seconds, this stretched cheese will harden and make a nice presentation piece. (This was a tip I learnt for Jamie Oliver.)

Now serve the cheese toasties with your favourite condiments.
