A luxurious, creamy take on potatoes

Ingredients
200ml milk
300ml double cream
4 cloves garlic (sliced)
Black pepper
Sea salt
2kg potatoes (desiree work well, but any good roasting potato will do)
Handful Parmesan cheese (grated)
1 teaspoon butter
2 rashers streaky bacon (diced)
Method
Step 1
Preheat your over to 200 degrees. Get out a roasting tray and grease it lightly with 1 teaspoon butter.
Step 2
Peel and slice your garlic cloves and add to a saucepan along with your milk and cream. Heat on medium high until boiling then remove from the heat. Season well with sea salt and black pepper.
Step 3
Slice your potatoes and add to your roasting pan. No need to be fancy and layer them. Pour over your cream and milk mixture and give everything a good mix to coat evenly.
Step 4
Sprinkle over your grated Parmesan cheese and bake in the oven for 40 minutes
Step 5
While your potatoes are baking, dice your rashers of bacon and fry in a hot frypan until nice and crispy. Remove from the pan and place onto paper towel to remove the excess fat.
Step 6
Once the potatoes have been in the oven for 40 minutes, remove and scatter the bacon over the top. Add an extra sprinkle of grated Parmesan at this point if you wish. Place back in the oven for a further 10 minutes to crisper everything up.
Serve with your favourite roast meat!
