Slow Smoked BBQ Ribs

Slow Smoked BBQ Ribs

 

Ingredients

  • 1 rack of pork ribs

  • Black pepper

  • Sea salt

  • 1 tablespoon cumin

  • 1 tablespoon smoked paprika

  • 1 tablespoon chilli flakes

  • 1 teaspoon cayenne pepper

  • 1 bottle of your favourite BBQ sauce

 

Method

Step 1

Set your charcoal BBQ up for indirect cooking. Heat your coals in a chimney starter for 20 minutes until they have a good coating of white ash. Open both the top and bottom vents on your BBQ.

Soak a handful of hickory wood chips in water for 20 minutes.

Once hot, tip the coals on one side of the BBQ. On the opposite side, fill a foil tray with water. This will provide some humidity in the BBQ and regulate the temperature.

Place your grill over the top and place your lid on the BBQ, allow to come up to temperature for 20 minutes.

Step 2

Mix all your rub ingredients together. Take out your rack of ribs and carefully remove the membrane from the back side of the ribs. This is easier to do with a butter knife, so you don’t slice right through it. Make a small cut and place your finger inside. Stretch it out and they pull the membrane off in one piece.

Now rub both sides of the rack with your BBQ rub. Make sure everything is covered.

Step 3

By now the BBQ will have reached an internal temperature between 150 to 200 degrees celsius. If it is a little hot, slightly close the top vent to reduce airflow and lower the temperature. Be sure to open it back up once the temperature is in the correct range.

Place your drained wood chips directly on the hot coals and then place the rack of ribs on the grill bone side down, over the tray of water. Place the lid back on and roast for 1 hour.

Step 4

Check on the ribs after the first hour, make sure your coals are still hot and top up the water level in the tray if needed. Add a few extra wood chips. Place the lid back on and roast for another hour.

Step 5

After the second hour, you may need to add a few coals to maintain the constant temperature.

Leave to roast for a third hour.

Step 6

After the third hour the ribs should be almost done. Carefully lift the rack with a pair of thongs. If the crust on the top of the ribs starts to break apart you are doing well. Brush the ribs with your favourite BBQ sauce and roast for a further 5 minutes. The BBQ sauces contains a lot of sugar, so be carefully not to burn it.

After 5 minutes, the sauce will be cooked on. Remove the ribs from the BBQ and enjoy.
