Simple ingredients make a fantastic dinner

Penne Carbonara
 

Ingredients

  • 200g Penne pasta

  • 2 cloves garlic, sliced

  • 4 rashers bacon, diced

  • 4 button mushrooms, sliced

  • 2 eggs and 1 extra egg yolk

  • 40g parmesan

  • Olive oil

  • Sea salt

  • Black pepper

 

Method

Step 1

In a large pot, boil enough water to cook your pasta, season well with sea salt.

Step 2

Separate one egg, keeping the yolk. Add in the other 2 whole eggs and scramble well.

Add your pasta to your boiling water and cook for 10-12 minutes.

Step 3

Get a non-stick pan onto a high heat and fry your diced bacon until crispy. Add your garlic and sliced mushrooms until cooked through. Remove the pan from the heat.

Step 4

Once your pasta is cooked, drain and reserve a little of the pasta water.

Step 5

Now add your pasta to the cooled pan containing your bacon, garlic and mushroom. Quickly stir in your scrambled eggs with a good handful of grated parmesan. The heat from the cooked pasta will be enough to slightly cook the egg mixture.

Step 6

Once the sauce has thickened and become silky smooth, season with black pepper and serve topped with extra grated parmesan.
