Asian BBQ Chicken Drumsticks

An oriental twist on BBQ Chicken

Asian BBQ Chicken Drumsticks

 

Ingredients

  • 1 kg Chicken drum sticks, skin on

  • Sea salt

  • Black pepper

  • Olive oil

For the Asian sauce:

  • 2 tablespoons clear honey

  • 3cm piece of fresh ginger, peeled and grated

  • 1 garlic clove, crushed

  • 1 heaped teaspoon Chinese five spice

  • 2 teaspoons soy sauce

  • 1 tablespoon sesame oil

 

Method

Step 1

Rub the chicken drumsticks lightly with a little olive oil to allow the seasoning to stick.

Season generously with sea salt and black pepper.

Step 2

Set your charcoal grill up for indirect cooking. Place you hot coals to one side. allow to heat up for 20 minutes.

Step 3

Place the drumsticks on the hot grill, directly over the coals for 2 minutes a side, just enough to get a good bit of colour on the skin.

Step 4

Move the chicken over to the side of the grill with no coals. Place the lid on the BBQ and allow to cook for 20 minutes or until cooked through.

Step 5

While the chicken is cooking, mix all your sauce ingredients together in a bowl.

Step 6

After 20 minutes of cooking, take the lid off the BBQ and brush the chicken generously with your sauce. Place the lid back on the BBQ and cook for a further 10 minutes.

Step 7

Now move your chicken back directly over the hot coals and cook for 2 minutes to add some nice grill marks.

Now you are ready to eat!
