Fettuccine with chilli and garlic

A speedy midweek supper...

Fettuccine with chilli and garlic

 

Ingredients

  • 400g dried fettuccine

  • 4 cloves garlic, diced

  • 1 red chilli, sliced

  • handful fresh parsley, chopped

  • Olive oil

  • 60g parmesan, grated

  • Sea salt

  • Black pepper

 

Method

Step 1

Get a large pot of salted water on the boil.

Add your pasta and cook for 8-10min until al dente

Step 2

Finely chop your chilli and garlic, add to a non-stick pan with a good splash of olive oil and cook for 5min, until the garlic starts to become translucent.

Step 3

Once the the pasta has cooked, drain, reserving a little of the pasta water. Add the pasta to your chilli and garlic along with your parmesan, black pepper, an extra dash of olive oil, the chopped parsley and a little of the pasta water.

Mix well until combined and you are done!
