Seared Scallops with Chorizo & Tomato

The spiciness of the chorizo adds an extra dimension to seared scallops.

Seared Scallops with Chorizo & Tomato
 

Ingredients

  • 8 large scallops

  • 1 spanish chorizo

  • 200g cherry tomatos

  • 1 lemon, juiced

  • Black pepper

 

Method

Step 1

Heat a large non-stick pan over a medium to high heat. Thinly slice your chorizo and add it to the pan, fry for 1-2 minutes. You won’t need to add any extra oil to the pan as the chorizo has plenty in it.

Step 2

Remove the chorizo from the pan and set aside. Leave the chorizo oil in the pan. Halve your cherry tomatoes and add to the pan along with the scallops, sear the scallops on each side for 2 minutes.

Step 3

Turn of the heat and return your chorizo to the pan. Add in your lemon juice and black pepper to taste.

Give everything a good mix and serve!
