Smashed Avocado

Smashed Avocado

 

Ingredients

  • 1 ripe avocado

  • 1 mini sourdough baguette

  • handful cherry tomatoes

  • 1 ball buffalo mozzarella

  • Olive oil

  • Black pepper

  • Splash of Tabasco

 

Method

Step 1

Heat a griddle pan on a high heat. Slice your sourdough baguette in half length ways.

Step 2

Grill your sourdough until golden. Scoop out your avocado into a bowl, add a pinch of black pepper and smash up with a fork.

Step 3

Remove your toasted sourdough and spread with your smashed avocado. Top with halved cherry tomatoes, torn buffalo mozzarella, black pepper and a drizzle of olive oil.
