Seared Duck Breast

Seared Duck Breast | The Aussie Chef

 

Ingredients

  • 1 duck breast, skin on

  • Sea salt

  • Black pepper

 

Method

Step 1

Remove duck breast from fridge and allow to come up to room temperature. Preheat your oven to 200°C, Fan 180°C.

Step 2

Pat skin of the duck dry with a paper towel. Season both sides with sea salt and black pepper.

Step 3

Place the duck breast skin side down in a cold non-stick pan on a medium to high heat without oil for 8-10 minutes or until golden brown. After 10 minutes, turn the duck breast over and seal the other side for 30 seconds.

Step 4

If your fry pan is oven proof, place the whole pan with the duck skin side up in the oven. (If your pan is not oven proof, transfer the duck to a pre-heated oven tray.) Cook the duck in the oven for 10 minutes.

Step 5

Remove the duck from the oven and allow to rest in the pan for 5-10 minutes.

Serve the duck sliced with asian greens.
