Italian Sausage Soup

An easy 30-minute soup recipe with pasta, sausage and tomatoes



 

Serves 4


Ingredients


250g Italian sausage, sliced

Olive oil

1 brown onion

Small bunch of cavolo nero

3 cloves of garlic, diced

2 stalks of celery, diced

200g short pasta, such as penne or macaroni

1 litre chicken stock

1 x 400g tinned tomatoes

Sea salt

Black pepper

Small bunch of basil

Parmesan Cheese, handful


 

Method


Step 1


Heat a large pot on medium-high. Add the Italian sausage to the pot and brown for 3-4 minutes.


Step 2


Add the onion, garlic and celery. Sauté with the sausage until fragrant and tender, stirring as needed for 3-4 minutes.


Step 3


Now at the pasta and fry for 1 minute.


Step 4


Add the chicken stock, tinned tomatoes and season with salt and pepper.


Step 5


Bring soup just to boil; then reduce heat to medium-low and simmer until the pasta is al-dente, about 10 minutes.


Step 6


Add in the diced cavolo nero and simmer for a further 5 minutes or until the pasta is fully cooked. Serve with grated Parmesan, basil leaves and a slice of crusty bread.
