Shake Shack style



 

Ingredients


Burger ingredients

4 hamburger buns (I used brioche) 4 tablespoons unsalted butter (room temperature, for easy spreading) 4 leaves green lettuce 2 tomatoes, sliced 500g ground beef, formed into four even balls Sea salt

Black pepper 4 slices American cheese (the plastic kind, cheese singles work well)


Sauce ingredients

120ml mayonnaise 1 tablespoon Dijon mustard 1 teaspoon tomato sauce Splash dill pickle brine Pinch cayenne pepper

 

Method


Step 1

To make the Shake Shack style sauce, in a bowl, combine all your sauce ingredients, mix until smooth and set aside.

Step 2

Heat a large cast iron skillet skillet until very hot. Meanwhile, slice your hamburger buns and spread butter on both sides. Place the buns into the hot skillet, buttered-sides down, and cook until golden brown, 1 to 2 minutes. Transfer to a plate.

Step 3 Place the burger balls (I did 2 at a time) into your cast-iron skillet. Using a piece of non-stick baking paper and a small, flat bottomed saucepan, squash the balls down until the form thin patties. Cook the burgers without touching them until the edges are brown and crisp, 2-3 minutes, then flip them. Place a slice of cheese on each burger and continue to cook until medium, about 1 minute more.

Step 4

Transfer the cheeseburgers to each bun, then add tomato, lettuce and top with the burger sauce. Serve alongside french fries.
